Deviled eggs……. who don’t love them???

They are a great keto/low carb food with a meal or just as a snack, and so simple to make.

They are great to keep in the fridge for the times you just need a bite of something.

And, it is so easy to make your boiled eggs in an Instant Pot.

Simply add 1 cup of water to the pot, put 6 eggs on your Instant Pot rack or egg stand (you don’t want them laying on the bottom of the pot), put the lid on the pot, close the vent, hit “Pressure Cook” for 6 minutes.

When done do a Natural Release for 6 minutes, then un-vent to finish the release and remove them from the pot.

Next, put them in an ice bath for 6 minutes, then peel.

Of course if you prefer not to use the Instant Pot, just make them on the stove. It works just as well.

Now slice the eggs in 1/2 and remove the yolks to a bowl.

To the yolks add 1 1/2 Tablespoons Mayo and 1 1/2 Tablespoons Dill Relish and mix with a fork, smashing the yolks up good.

You can use a fork to “stuff” the eggs, or you can get fancy and pipe it in.

I top mine with smoked paprika and they are delicious!!!

Keep the eggs stored in a container in the refrigerator.

Ingredients

  • 6 Eggs

  • 1 1/2 Tablespoons Mayo

  • 1 1/2 Tablespoons Dill Relish

  • Smoked Paprika

  • 1 cup water

Directions

  • Pour 1 cup water into the Instant Pot.
  • Place the 6 eggs on Instant Pot rack, or egg rack.
  • Put lid on the pot and close the vent.
  • Hit “Pressure Cook” for 6 minutes.
  • When time is up, let the pot do a Natural Release for 6 minutes, then un-vent to finish the release.
  • Place the eggs in an ice bath for 6 minutes, then peel.
  • Slice eggs in half and remove the yolk to a bowl.
  • To the yolks, add the Mayo and Dill Relish, mixing well with a fork, mashing the yolks up well.
  • With the fork (or by piping) stuff the eggs with the yolk mixture.
  • Sprinkle with the Smoked Paprika
