This Keto Cheesy Cauliflower Bake is a side that you cannot go wrong with!
My husband loves raw cauliflower, but he has not really liked any cooked cauliflower dishes, up until now. He liked this so much, he actually asked me to make it again! I know that with keto, it can be difficult to come up with ideas for side dishes, so it makes me very happy when I find one that he actually asks for.
When it comes to cooking, I love it! I don’t mind diving into complex dishes, but I also like dishes that are not. Sometimes it just needs to come together quick. This one is there.
The ingredients for this dish is simple.
You will need:
- 1 bag of frozen cauliflower (not riced)
- Cream cheese
- Heavy Whipping Cream
- Butter
- Salt & Pepper
- Bacon Bits
- Shredded cheddar cheese
I do use the bags of bacon bits that you buy at the store, but you can also use freshly fried and crumbled slices.
The steps for this are very simple. Preheat your oven to 350 degrees. Grease your 8×8 dish, I just use an olive oil spray. You will want to put your bag of cauliflower in the microwave for 6 minutes. I use the Wal-mart brand, and these are steam bags. If you use something different, check your package instructions. Remove and put the cauliflower in a strainer to remove any water that may be in it. Now, put your cream cheese and butter in the a large mixing bowl and pop in the microwave for about 20 seconds to soften well. Stir that to blend, then add the heavy whipping cream, salt and pepper. Blend this well.
Now add the cauliflower and stir around to coat it all.
Throw in the bacon bits and stir just a bit.
Put this into the prepared dish, top with cheese, cover and bake. Remove the cover and bake another 10-15 minutes. Just watch it and don’t let the cheese burn.
