I just absolutely love these Keto Muddy Buddies!
I am a big fan of snacking. And, I love to have something on hand that I can just grab some and go. This works so well for that.
It’s also great for family game night, or party time when you want to have some great snacks sitting around.
And, it’s also great for road trips. It doesn’t need to be ketp cool, so no worries there.
It don’t really matter to me. I will eat it for any occasion.
Let’s look at what we need…. Your ingredients are simple.
You will need pork rinds, no sugar addedf peanut butter, sugar free milk chocolate chips, butter and powdered erythritol.
That’s it!
Now, let’s make some Keto Muddy Buddies …..
First thing we need to grab a large bowl and break the pork rinds up into bite-size pieces. Make sure you pull out the hard ones, you really don’t want those in there.
In a medium saucepan over medium/low heat, add your butter and let that melt. Add the peanut butter and stir until this is melted together and well blended.
Start adding your milk chocolate chips, just a bit at a time, stirring after each addition and wait until those are pretty much melted before adding more. Continue this until all chips are added and melted.
Turn the heat off and remove from the burner. Add just a pinch of salt and stir.
Add a little of this melted mixture over the pork rinds just a little at a time and stir well after each addition. You will want to get each piece coated well.
Starting with 1 cup of the powdered erythritol, add a little at a time, stirring and tossing a bit after each addition. Continue to add until it is coated very well. You may use up to 2 cups. Of course, you can add more if you want more coating.
Once it is all completely coated, spread the Keto Muddy Buddies out on wax paper and let it cool and dry.
Keep your Keto Muddy Buddies stored in a covered container.
