Any time is a great time for some wonderful Keto Peanut Butter Bars!!

You will not believe how easy these are to make, with just a few ingredients, and just a few minutes of your time. This is probably one of the easiest recipes I ever make, and I make them often!

To start, go ahead and preheat your oven to 375 degrees and grease a 8×8 pan. I just use some olive oil spray for this.

In a large mixing bowl, you will add 1 cup of no sugar added peanut butter, 2 eggs at room temp, 1/2 cup of erythritol, 1 teaspoon of baking powder and 1/2 teaspoon of vanilla extract.

Here is a tip for you: If you are like me, you never have any eggs at room temp. Simply put some hot water in a suitable size bowl for the number of eggs you need, put you eggs in the water and let them sit there for a few minutes while you are preparing everything else for the recipe. By the time you need them, they will be ready for you.

Mix all of this up well.

Now just spread this mixture into your prepared 8×8 pan.

Bake this for right at 14 minutes. Don’t over bake as it will get very dry.

While allowing it to cool for a few minutes, add 1/4 cup sugar free chocolate chips and 1 teaspoon of olive oil to a small mixing bowl.

Pop in the microwave and set it for 30 seconds. Take it out and give it a stir. If not completely melted, microwave for another 15 seconds. You want it good and melted.

With a spoon, drizzle the melted chocolate over the bars. Let them sit a bit and cool, but not too long as they are delicious warm!!

Cut into 12 bars. Store leftovers, if there are any, in the fridge for up to a week.

  • Spread mixture into the prepared pan.
  • Bake for 14-16 minutes. Do not over bake. Remove from oven.
  • While cooling bars for a few minutes, add chips and oil to a small mixing bowl and microwave for 30 seconds. Stir and microwave for additional 15 seconds. Stir again.
  • Drizzle chocolate over the bars. Let them continue to cool for a few minutes before cutting into bars.
  • Store leftovers in the fridge.
