This is the perfect time for some Keto White Chocolate Peanut Butter Candy!
Valentine’s Day is just around the corner, and I’m sure you or someone you know is going to want something delicious!
I have to tell you, I am an addict when it comes to kitchen accessories (just ask my hubby). The kitchen, after all, is my playground. Well, I seem to have collected a few silicone molds, one being a nice big one with heart shapes. And, with us (me) liking sweets like we (I) do, it just seemed right that I should make something suitable for Valentines. I have been wanting to try this anyway, so it just seemed like the right time. I have always loved chocolate and peanut butter together, so here we go…… Some delicious Keto White Chocolate Peanut Butter Candy….. Care to join me??
Before I start, let me say that my mold makes 24 hearts. If you have a smaller one, maybe one that makes 12, just cut everything in half.
We will need sugar free white chocolate chips. I do love the Bake Believe brand. Of course, Lily’s are good also, and both of these brands can be purchased at Wal-Mart. We also need some coconut oil, you could also use olive oil if you prefer. We need some sugar free Peanut Butter, some butter, some powdered erythritol and just a bit of vanilla.
If you are making the 24 batch, save about 3 oz. of the white chips for covering the tops later. For now, in a medium microwave bowl, add 9 oz. of the white chips with about 3/4 Tablespoons of coconut oil. Microwave in 15 second intervals, stirring after each, until the chips are melted. Use this to coat you mold shapes, using a spoon to spread it up the sides. When all the shapes are done, place in the freezer for 15 minutes.
Please forgive me, I do tend to get a bit messing with chocolate……
When they have about 5 minutes left in the freezer, you can start on the peanut butter mixture.
In a microwave bowl, add the peanut butter and butter and microwave for 20 second intervals until melted. Stir to blend well.
To this, add your powdered erythritol and vanilla.
Whisk this up very well until smooth and well blended.
Using a small spoon, start filling the frozen white chocolate molds. When done, place back into the freezer for another 15 minutes.
When these are about done in the freezer, you can start melting the other 3 oz. of the chips with 1 teaspoon of coconut oil in the microwave. Do 15 second intervals and stir between each until melted.
Again, with a small spoon, spread the white chocolate chips over the frozen peanut butter. When finished, place back into the freezer for another 15 minutes.
Again, messy with the chocolate…….
You are now ready to pop these out and enjoy! Keep stored in a covered container in the fridge. You can set some out to soften a bit before eating.
