Do you know the many roles of pork rinds in the keto diet?
Yes, pork rinds are a wonderful snack! Coming in at 0 carbs makes them hard to beat. Of course that is for the plain. If you like the barbecue flavor, then they will add a carb or two.
We always have a few bags in our home. We love snacking on them during game night. Our little doggie even enjoys a couple (plain ones only!)
But, did you know they can be used for so much more than just a good snack??

I have found there are times when an opened bag may go a bit stale if we don’t eat them quick enough. What to do with these?? You pop them in a food processor and crush them!! Store them in a mason jar. You will be glad you did! I usually always have a jar just waiting to make something delicious!!
Yes, there are some barbecue ones in this mix.
What do we do with them?
For one, we coat meat. This is a wonderful substitute for a flour batter. We coat chicken, pork chops, anything that would normally have had the flour batter. If you want to take it step further, add a bit of almond flour or grated parmesan cheese in with the pork rinds.
Here’s you a quick recipe that we love…..
Put a stick of butter in a 9×13 dish. Stick the dish in a 350 oven and let the butter melt.
While melting, fix you a bowl with a beaten egg (it may take two) and another bowl with crushed up pork rinds (this is where I love the barbecue ones). If using plain, add some salt and pepper and any other seasonings you may like (garlic powder, onion powder, italian seasoning, etc)
Using a fairly large package of chicken tenders, one by one, dip in the egg then dip in the pork rinds, then place each tender in the dish of melted butter.
Bake these at 350 for 30 minutes, flip them over and bake for another 30 minutes.
You can always cut this in half and use a 8×8 or 9×9 dish and 1/2 stick of butter if you don’t want to make that many.
What else can you do with them???
Meatloaf!!!! On keto you cannot use oatmeal or bread for the filler to make it stick together. BUT, you can use pork rinds!!! Your meatloaf will be just as delicious as always!
I think it is a wonderful thing when we can learn the many roles of pork rinds, such a simple snack that can do so much.
You may even think of more uses yourself that I would love to know about!
